So you have worked at a couple of neighborhood coffee stores, and worked for at least one of the "chains". You have put a business plan together, and you have even attended some SCAA (Specialty Coffee Association of America) meetings and/or seminars, and now you have found the perfect location.

Before signing your life away, make sure that this location really is good, and that there are no hidden restrictions on advertising or signage. I had one client who opened up a great looking coffee shop opposite a brand new supermarket. However, the township made him take down his sign because it violated some insignificant by-law. His business completely dried-up and he had to close.

Another small, but incredibly important factor, is trash. Who is responsible for its removal, and is the dumpster easily accessible? Find out now, otherwise you may regret it later.

Also find out if you have a monopoly in your shopping area/mall/strip mall/etc. Once again I have a horror story of a small operator who built up a nice trade around an espresso cart situated in a mall. When the mall saw how prosperous the cart was, they leased out a large space to a "chain", and did not renew the cart operator's lease.

I'm being negative with all these stories because I want you to succeed, and if you try to foresee (and solve) problems in advance, your energies can be directed towards producing the finest cappuccino in the hood. And please remember that the great American public does NOT drink espresso, they drink multi-hued and flavoured cappuccinos/lattes.

Quick test - how many "c"s are there in cappuccino?

So now you are the proud lessee of an empty building. But is it really empty? Go find a bug and rodent exterminator before doing anything else! AND NOW, before going out and buying equipment you do not need (but it looks so "neat" and "cool", and the salesman said I would "grow" into it!), decide on your menu. Do not be overly ambitious, and remember that the health and fire inspectors will be watching over your shoulder.

Having decided on your menu, you can now lay-out your store, and start ordering equipment. DO NOT HAVE EQUIPMENT DELIVERED UNTIL YOU ARE READY - it will just get dirty, and may even become damaged. Make sure that you insure the place from the day you sign the lease. And, if you are fitting out in winter, make sure you have heat so that the pipes don't freeze and burst. And of course make sure that your place is accessible to the handicapped. Not only is it socially unconscionable not to make it accessible, it is also against the law.

Well now for the big moment… let's go shopping for an espresso machine. And by the way, I have had clients who have firmly told me that they will need both an espresso machine and a cappuccino machine! Unfortunately my patience usually breaks down at this point.

Do not buy on price alone. Remember the golden points to consider when buying equipment and product:

• PRICE
• QUALITY
• SERVICE

Choose two of the above, and price had better not be one of them. Remember the difference in price between equally featured machines will be less than the cost of a cappuccino per day (when you amortize it over a couple of years).

The first question your friendly neighborhood espresso salesperson should ask is "What size beverages are you going to produce and sell?" The second question is "How many do think you will sell per hour, both in peak times and non-peaktimes?" Those two questions will then determine how big an espresso machine you will require. If anybody tries to sell you anything larger than a two-group machine, move on to the next dealer. Unless you have the espresso concession at Rome's (as in Rome, Italy's main railway station), you won't need anything bigger than a two-group machine.

Try the equipment; check references; and ensure that the equipment seller can properly back up the warranty and has trained service personnel and spare parts. Also, can they lend you a loaner if your equipment needs to be serviced in their shop?

Now what about the coffee? Once again check the references, and taste the coffee (not on your home machine, but from a proper commercial brewer). Nearly all reputable coffee roasters will lend you regular commercial brewing equipment at no cost for as long as you purchase their coffee - but check whether they will give you service for that equipment, and make certain their equipment is reliable. And can your roaster supply all your coffee needs, or must you buy different coffees from different sources? Once again check carefully, and taste, taste, taste.

DON'T FORGET TEA. Remember that 1 in 2 adult red-blooded Americans do NOT drink coffee. Mathematically that approximates to 50%, so do not forget tea (and iced tea for that matter). And of course your flavouring (yes, there is a "U" in flavouring) syrups. Food such as biscotti and muffins are not in my realm of expertise - I only eat them. But use the same criteria for searching out your supplier(s).

Make sure that you have plenty of help and support from loyal and very hardworking spouse(s), relatives and friends, because you will be working 24 hours a day, 7 days a week to make the place look good, and to keep it running after it's open.

And most important, find a buyer after 12 months, because you will need the rest!

Cocoa is the dry chocolate powder derived from chocolate liquor. It comes in two types: natural and Dutch process. Dutch processed cocoa is processed with an alkaline. It is slightly darker, smoother, and more easily dissolved than natural cocoa. In many recipes, natural cocoa and Dutch cocoa are not interchangeable. Natural cocoa is slightly acidic and will therefore chemically react with baking soda to create carbon dioxide bubbles and some leavening power. Dutch cocoa is slightly alkaline, will not react with baking soda, and must rely on baking powder for leavening.

Bitter (unsweetened) baking chocolate is made from pure chocolate liquor. By specification, it must contain 50 to 58 percent cocoa butter though with inferior products, vegetable oil may he added. Depending on the producer, milk solids, vanilla, or salt may be added. I have a package in front of me that contains only chocolate and milk solids. Unsweetened chocolate has a bitter taste and relies on sweeteners in the recipe to make it palatable.

Sweet baking chocolate--bittersweet, semisweet chocolate--has sugar added. These products must contain 35 to 50% cocoa butter but may have as little as 15% chocolate liquor. Because unsweetened chocolate has twice the chocolate liquor, we prefer to use unsweetened chocolate in most of our baking.
Bittersweet and semisweet chocolate can be used interchangeably in recipes though there is a difference in flavor. Often, bittersweet is a more expensive chocolate and to many, a better, richer-flavored chocolate.

Milk chocolate is made with ten percent chocolate liquor. It contains a minimum of twelve percent milk solids. Because it has such a low percentage of chocolate liquor, rarely is it melted and added to batter or dough.

White chocolate contains no chocolate liquor but is made with cocoa butter. Historically, the FDA has not regulated the manufacture of white chocolate so you need to read labels carefully. If the product was made with vegetable oil instead of cocoa butter, it will not perform the same as a product with cocoa butter.

Chocolate chips are made with chocolate liquor with only minimal amounts of cocoa butter. Instead, they are made with vegetable oil and stabilizers to help them hold their shape. Without the cocoa butter, chocolate chips have a different taste and mouth feel. Chocolate chips will have a firmer set in puddings, pie fillings, and sauces than baking chocolate. Chocolate chips can be purchased in milk chocolate and semi-sweet chocolate.

Tuna Salad Sandwich Recipe

1 can of tuna fish usually packed water or oil
1/3 cup of cottage cheese
2 Tablespoons of mayonnaise
1/4 purple onion, chopped finely
1 celery stalk, chopped finely
1 Tablespoon of capers
Juice of half of a lemon
Pinch or two of dill
2 Tbsp minced fresh parsley
1 teaspoon of Dijon mustard

Mix all of the ingredients. Be sure not to drain the water or oil from the can of tuna. Use it instead in the tuna salad mixture. I like to serve on toast, either open faced, or in a regular sandwich with lettuce and tomatoes and pickles. For a low carb option, serve on sliced lettuce. You can server this along with vegetables or cottage cheese.  For wine Sauvignon Blanc or Chenin Blanc other wine that you might like.

Shrimp with Avocado Salad

1/4 cup of white wine vinegar
1/4 cup grape-seeds oil
3 garlic cloves, minced
1/2 lb medium shrimp, cooked, peeled, and de-veined
2 ripe avocados
Lettuce - preferably butter lettuce or red leaf lettuce
Lemon slices for garnish
As and Option - 2 Tbsp chopped roasted walnuts or pistachios
1 Tbsp chopped cilantro

Combine oil, vinegar, and garlic in a bowl. Chop shrimp into 1/2 inch pieces and add to oil mixture. Arrange leaves of lettuce on individual plates. Cut avocados in half and remove pits. Remove some of the avocado around the pit area and mix in with the shrimp. With a spoon, carefully scoop out avocado halves from their skins in one piece. Place avocado half on plate with lettuce, spoon shrimp mixture on to avocado. Sprinkle with walnuts and cilantro (optional). Serve with lemon slices for garnish. You can server this along with vegetables or cottage cheese. For wine Sauvignon Blanc or Chenin Blanc or you choice of wine.

Spanish rice with Chicken
2 tablespoons olive oil (can use up to 1/4 cup)
1 onion, chopped fine
1 garlic clove, minced
2 cups of medium or long-grain white rice
3 cups of chicken or vegetable stock if vegetarian
1 heaping tablespoon tomato paste or 1 cup of diced fresh or cooked tomatoes, strained
Pinch of oregano
1 teaspoon salt
2 pounds of chicken which can be grilled or fried and cut in to slices or chucks and added along side the rice or mix with rice as it simmers. This is a nice addition along with the rice and can be mixed in once the rice has been cooked as well.

In a large skillet brown rice in olive oil, medium-high heat the add onion and garlic. Cook onion rice mixture, stirring frequently, about 5 minutes, or until onions are softened.
In a separate sauce pan bring stock to a simmer. Add tomato sauce, oregano, and salt. Add rice to broth. Bring to a simmer. Cover. Lower heat and cook 15-20 minutes, depending on the type of rice and the instructions on the rice package and let sit for 5 minutes. For wine Chenin Blanc or maybe Gewürztraminer again depending on your taste for wines.

9 graham crackers
1/2 C. sweetened, flaked coconut, toasted
5 Tbs. butter or margarine, melted
34 lg. marshmallows (8 oz.)
1/2 C. whole milk
1 1/2 C. heavy or whipping cream
1 oz. unsweetened chocolate, grated

Preheat oven to 375 degrees. Combine coconut and graham crackers in food processor until coarse crumbs form. Combine crumbs and butter with fork. Press to bottom and side of 9-inch pie plate. Bake 10 minutes and cool on wire rack. Heat marshmallows and milk in 3-qt. saucepan over low heat until smooth, stirring constantly. Remove saucepan from heat. Cool completely (30 minutes.) In large bowl with mixer at medium speed, beat cream until stiff peaks form. Fold marshmallow mixture into whipped cream with grated chocolate. Spoon filling into cooled crust. Refrigerate pie at least 3 hours or overnight. Top with mini marshmallows, maraschino cherries and rainbow sprinkles.

Falling in Love Chocolate Mousse Pie

9-inch baked pastry shell
1 14-oz. can condensed milk (not evaporated)
2/3 C. water
1 (4 serving) pkg. chocolate pudding mix (not instant)
1 1-oz. square unsweetened chocolate
2 C. (1 pt.) whipping cream, stiffly whipped

In large saucepan, combine condensed milk, water and pudding mix; mix well. Add chocolate. Over medium heat, cook and stir rapidly until chocolate melts and mixture thickens. Remove from heat; beat until smooth. Cool. Chill thoroughly; stir. Fold in whipped cream. Pour into prepared pastry shell. Chill 4 hours until set.

I Don't Want Earl's Baby Pie

1 pie crust
4 Tbs. butter
3 slices ham
8 green onions
1 C. brie cheese
1 C. parmesan cheese, grated
4 eggs
2 C. heavy cream
1/4 tsp. ground nutmeg

Preheat oven to 400 degrees. Cover pie crust with foil and bake for 10 minutes. Remove foil and bake 5 minutes more. Remove crust and reduce heat to 325 degrees. Julienne ham. Chop green onions. In skillet, saute ham until brown. Remove and set aside. Saute onion until tender. Remove with slotted spoon and combine with ham. Spread on bottom of pie crust. Spread brie over ham mixture and sprinkle with parmesan. Combine eggs, cream and nutmeg; pour over cheese. Bake 30 minutes or until set. Cool slightly, cut into wedges and serve.

4 8-oz. cream cheese, softened
1 C. unsalted butter, softened
1 1/2 C. sour cream
1/2 C heavy whipping cream
1 3/4 C. white sugar
1/8 . cornstarch
1 fl. oz. amaretto liqueur
1 tsp. vanilla extract
5 eggs
1 egg yolk
1 C. chopped pecans
1/2 tsp. nutmeg

Bring all ingredients to room temperature. Preheat oven to 375 degrees. Wrap outside of 9-inch springform pan with foil. Generously butter inside of pan. In large bowl,beat cream cheese and butter until smooth. Mix in sugar and cornstarch. Blend in sour cream and whipping cream. Add amaretto and vanilla. Stir in eggs and egg yolk one at a time, mixing thoroughly between each addition. Pour batter into pan. Place pan in another pan at least 1 inch wider and add water to outside pan (prevents cracks). Bake on center rack for 70 minutes. Turn oven off and let cool with door open for 1 hour. Remove cake from water and chill at least 3 hours before removing cake from pan. Top with crushed pecans and dust with nutmeg.

2 1/2 C. graham cracker crumbs
1/2 C. brown sugar
1/2 C. melted butter
2 large eggs
1/3 C. granulated sugar
1/2 tsp. salt
2 C. milk, scalded
1/2 tsp. vanilla extract
1/4 tsp. ground cinnamon
3 egg whites
1/2 C. white sugar

Mix crumbs, brown sugar and butter until well-blended. Press mixture into a 9-inch pan. Preheat oven to 425 degrees. Beat eggs slightly in a large bowl. Add sugar and salt. Slowly stir in hot, scalded milk. Add vanilla. Strain mixture into pie crust. Sprinkle top with cinnamon. Bake on lower shelf 25-30 minutes, or until custard is firm. In larger glass mixing bowl, beat egg whites until foamy. Gradually add 1/4 C. white sugar, continuing to beat until stiff peaks form. Spread meringue over pie after custard is set, return to oven until meringue is slightly brown. Cool 15 minutes.
