Waste Accumulation Theory

The waste accumulation theory of aging states that in the course of a life span cells produce more waste than they can properly eliminate. The waste includes various toxins that when accumulated to a certain level they can interfere with normal cell function and ultimately kill the cell.

Limited Number of Cell Divisions Theory

This theory is concerned with the number of cell divisions directly affected by the accumulations of the cell's waster products. As more wastes accumulate over time the cells quickly degenerate thus causing aging and ultimately death.

Hayflick Limit Theory

Dr. Hayflick theorized that the aging process was controlled by a biological clock contained within each living cell.  Studies done in 1961 concluded that human fibroblast cells (lung, skin, muscle, heart) have a limited life span. They divide approximately 50 times over a period of years and then suddenly stop. They also concluded nutrition seemed to have an effect on the rate of cell division. Final conclusion of this theory states that improper functioning of cells and loss of cells in organs and tissues may be responsible for the effects of aging.

Death Hormone Theory (DECO)

Brain cells or neurons are unlike other cells in that they do not replicate. At birth we have roughly 12 billion of them and over a life time about 10 percent die out. Dr. Donner Denckle speculated that as we age the pituitary begins to release DECO which inhibits the ability of cells to use thyroxine. Thyrozine is a hormone produced by the thyroid-governing basal metabolism, which is the rate at which cells convert food to energy. The metabolic rate brings on and accelerates the process of aging.

Thymic-Stimulating Theory

Dr. Alan Goldstein says "the thymus is the master gland of the immune systems." The size of the gland continues to reduce and shrink to round three grams by age 60. Scientists are investigating the possibility that the disappearance of the thymus contributes to the aging process by weakening the body's immune system.

Mitochondrial Theory

This is the free radical theory is supported by directed experimental observations of Mitochondrial aging. Our primary source of energy comes from ATP. Mitochondria are the energy-producing organelles in the cells that produce ATP.  They produce cell energy by a process that leads to forming potentially damaging free radicals. Evidence seems to tell us that various kinds of accumulated DNA damage over time contribute to disease. New research in mitochondrial repair could play an important role in the fight against aging.

Errors and Repairs Theory

Dr. Leslie Orgel suggested in 1963 that because the "machinery for making protein in cells is so essential, an error in that machinery could be catastrophic." Since the system is incapable of always making perfect repairs on these molecules, the accumulation of flawed molecules can cause disease and other age changes to occur.

Redundant DNA Theory

This theory is similar to the error-and-repairs theory in that it also blames errors accumulating in genes for age changes. A difference is that as these errors accumulate the reserve genetic sequences of identical DNA that take over until the system is work out.

It was also made in levels much larger than would generally be used in hand-stitched embroidery; tapestry panels ranging from ten or twelve feet in height and twenty feet long are rather typical. The main medium was wool, but in special models silk was moreover used. In some of the finest works the use of gold and silver can be seen. The main center of tapestry weaving from the year 1500 has been Brussels. But the outputs during the years have enormously varied in quality. Biblical and Roman history, peasant, mythology and scenes ensuing Teniers were some of the subjects. Several seventeenth-and eighteenth-century works are let down by the reality that over the years a murky brownish image has faded their red dyes. Brussels tapestries usually own a mark with a shield with the letter 'B' on either side.

At times weavers add their names or initials, in the work. There were two critical factories in France. Both the Gobelins and Beauvais were established in the second half of the seventeenth century. Though the former was a private worry with State support, the latter was a Royal factory and it was only in the late eighteenth century when one could buy any of its productions. Though both did work of the highest quality, Beauvais was generally well-known for a chain of panels established on the Fables of La Fontaine, and for a large amount of sets of settee covers and chairs. The former was also produced at Gobelins, where approximately 1775 they made beautiful and model sets of furniture covers and matching wall hangings.

Example of these types of decorative harmony is to be seen in a room constructued by Robert Adam, remains at Osterley Park, near London. A set of furniture (shorn of its wall-hangings but even now intact Gobelins covers) made for Moor Park in Hertfordshire, is housed in the Museum of Art in Philadelphia. A good deal of of these rich ensembles are intact even now, but a collection of tapestries that had been made for a store at Croome Park in Warwickshire has been sold off for a sum of £50,000, and is now seen in the New York, Metropolitan Museum of Art.

Once again in France at Aubusson, tapestry panels, chair covers and also tapestry carpets were produced. Most of the output belongs to the nineteenth century, despite the pattern of work is similar to an earlier era. Philip and Michael Wauters, supplying to international markets, they wove their tapestry in Antwerp. Works popularized by additional plants were copied here with accomplishment, these Flemish tapestries were also at times confused with the English productions they copied. Brussels was the center head of tapestry weaving.

When you have no time to cook your own food, what do you do? The answer is obvious, of course. You go out to your local fast food outlet (in deference to your kids' preferences), you go out to the food strip at the mall, or you order take out. It is convenient and you can eat your fill at these joints. What's not so obvious, however, is what such a practice is doing to you and your children's health.

Healthy eating habits are crucial to achieving a healthy mind and body. Healthy eating habits refer to eating meals regularly, eating well-balanced meals, and eating only what's necessary. Healthy eating habits do not involve eating burgers and fries for lunch.

The Fast Food Culture

Unfortunately, some people do think that it is healthy to have burgers and fries for lunch. Advertising spiels have a lot to answer for this. In a world filled with fast food and restaurants, it is but natural that the companies serving up this food have to undermine people's preference for home-cooked meals or they will become redundant and not make any profit.

As such, big food corporations put millions of dollars into TV commercials that assert in not so many words that a meal eaten at a fast food is special while eating at home with your family the meal your mother cooked is nothing but ordinary.

Such a reversal of values was helped along by the faster pace of life, where people have no more time to devote to preparing home-cooked meals. People are always driving or commuting to work, attending business meetings, or maybe holding one or two jobs. You cannot expect someone who has already been working 12 hours straight to come home and prepare a lengthy meal. It makes more sense to buy some take-out or bring the family out for a meal.

People are aware that they need to eat healthy food. However, what do you do if you are misled into thinking that restaurant fare and fast food taste better than home-cooked food? Sadly, there's also an underlying effort to make people think that food in restaurant and fast foods are all healthy, that there's really not much difference when you eat in or out. It's all the same, but eating out is more convenient.

As people continue to be bombarded with mass media advertisements advocating the value of fast food and eating out, and as people become even more busy trying to hold on to their jobs, more and more people stop cooking and begin taking these commercials to heart. People have deserted home-cooked and nutritious meals that need hours of preparation for big servings of calorie- and fat-rich food that gets served up within minutes.

The Diseased Nation

The success of the fast food industry in establishing a culture that thrives in fast food and meals eaten out, our people's health has been placed on the balance. Thus, America is now an ailing nation. Incidence of heart disease, diabetes and high blood pressure continues to rise as obesity becomes even more prevalent.

I am not saying that fast food is to be avoided at all costs. What I am saying is that a trip to the fast food should be made only very infrequently, not three times a week as most people now are wont to do. A change should be instituted to bring back the days when there's no doubt about what healthy food is and where to find it. This is all I ask.

Since most of the New England states in the U.S. are situated close to water, it is no wonder that many of the dishes associated with this region present an array of seafood ingredients. When interested in bringing the taste of New England to the dinner table, you may encounter a wealth of recipes and menu ideas, such as boiled lobsters, lobster rolls, New England Oyster Stew, Boston Baked Beans, Hasty Pudding, and Johnnycakes. Below you will find a few recommendations for your next New England kitchen experience:

Chowder:

One of the most significant items on a New England restaurant menu is chowder and throughout regions, such as Connecticut, Maine, Massachusetts, New Hampshire, Rhode Island, and Vermont – a host of variations provide a never-ending supply of ideas. The centuries-long tradition of preparing chowder has evolved to include clear and thick chowders like the cod chowder typical in Newfoundland. If you like fish, you might want to experiment with a salt cod chowder or fish stew.

The ingredients added to various regional chowders differ. To produce chowder typical of Maine, tomatoes are preferred by residents living about Penobscot Bay. Preferences are so fickle that hopping on the other side of the bay and you will encounter chowder made without tomatoes and heavy on the milk. It is not uncommon to hear of Down East Chowder about the region, as inhabitants of Maine often call their residence "Down East."

Rhode Islanders living in the western part of the state tend to highlight clear chowder with some cooks using tomatoes to create an attractive pink tint. Additional chowder options include New England Clam Chowder and Boston Clam Chowder with added ingredients, such as cream, potatoes, bacon, and onions.

Coffee Milk:

To pay homage to the smallest state in the U.S., why not explore one of the famous beverages associated with Rhode Island – coffee milk? While the drink is quite similar to chocolate milk with coffee-flavored syrup, the basic recipe is made when combining two tablespoons of coffee syrup to 8 ounces of milk. While Rhode Island is the only place where you can purchase this drink, you can still emulate its contents to bring the taste to your household.

Boston Cream Pie:

What is a New England dinner without the dessert? New England cooks are known for their cakes and pies and one of the most recognizable across the United States is the Boston Cream Pie, which is actually a cake and not a pie. The typical serving consists of two sponge cake layers with a thick vanilla custard filling. Usually a chocolate glaze is added on top or a simple sprinkling of confectioners' sugar, which is then cut into wedges and served like a pie. The common recipe generally consists of flour, water, butter, and eggs.

This mixer is small, convenient, and has the ten-power speed, according to the manufacturer, to mix up to four loaves of bread at once, nine dozen cookies, or seven pounds of mashed potatoes. Originally, this mixer comes with a regular mixing head for baking and blending in general.

Also included is the kneading hook for when making bread and also the wire whip for egg whites or whipped cream.

In my kitchen, this mixer was my very first stand mixer.

From what I discovered, there were a lot of very well designed and thought-out aspects to this mixer.

One of the first things that I liked about this mixer was the convenient tilt-head. When I was trying to blend in flour or something messy, it was nice to have more room to work with- instead of the other mixers which have a bowl that comes down, the head doesn't go up.

Frequently there's just not enough room to fit the item you're trying to blend in into the bowl with the little bit of space provided. It can usually be quite messy and frankly I do not like a messy kitchen.

Another good thing about the Artisan KitchenAid mixer is that it has a locking head to keep it from bouncing and such on the tougher dough.

If the head bounces, like it does on some other mixers, then how do you plan on mixing the dough thoroughly? With that strategy, all you're going to end up with is a lightly mixed mess… and no one likes that.  This Kitchen Aid Stand Mixer is a real work horse!

This mixer's ten-speed controls are capable of mixing nearly anything you can think of. Any faster than the speeds which are offered on the mixer and the mixer might take off like a plane. The lowest speed is just right for the mixes which are very liquid-based or those which can spill out onto the counter easily.

My primary negative comment about this mixer is that, for some jobs, it's just not large enough. It says that you can mix nine dozen cookies- but not if you want anything in those cookies. For about 4 dozen chocolate chip cookies, the mixer really has to work.

Even when it can mix all the ingredients, by the time you are done filling up the bowl, the mix is really high on the sides and it can spill easily. So I always shoot for smaller recipes or make the larger ones in two batches.

Overall, this is a great mixer for everyday chefs who are just starting out or even for those who have many years of experience under their apron but are looking to purchase a basic stand mixer.

This Artisan KitchenAid mixer is perfect for nearly any occasion and for any baker or chef, in the family kitchen!

Pick the color that is right for you and then enjoy your new KitchenAid Stand Mixer.

Worried that your first cup of coffee for the day is starting to lose its edge?

Then fear no more. These days' manufacturers are making the espresso machine available to just about anyone who wants one. Creating the perfect café style shot of this black aromatic brew first thing in the morning has never been easier.

And these new fangled machines are nothing like your Dad's old style Coffee Maker either.

The older generation just don't seem to understand our modern day fascination with drinking a good espresso. The social forces underlying life today are bringing household accessories like espresso machines to the forefront of our collective minds.

Almost daily there seems to be new international influences popping up in the coffee scene and this, coupled with the widespread acceptance of the local specialty coffee shop have all helped people from America, Australia, the UK, Asia and many other countries around the world to totally embrace the idea of owning an espresso machine.

Life today is all about the quick fix – it is our need for instant gratification.

What else is there that provides a quicker fix than the punch delivered by a shot of good steaming espresso?

It makes perfect sense that coffee drinkers want to add an espresso coffee maker to their list of kitchen gadgets all in the name of getting that instant morning heart starter - you can also justify your thoughts by saying that there is the superior flavor too!

Then make mine a double please!

Is that a double shot you mean? Well some mornings – yes!

Now days the espresso coffee maker is available in just about any style or configuration you could possibly imagine. You can start with the small, single-cup models and go right on up to the top end of the range to the more expensive imports better suited to busy coffee shops than a home kitchen. Really it is only a matter of how deep your pockets are and how much spare space you have on your kitchen bench.

Technically espresso machines range from piston operated models that offer a "throw-back" feel of old world coffee houses all the way up to the super dooper automatic models that do everything apart from drink the coffee for you – they are even self cleaning – all at the touch of a button. For our time-starved generation, it's little wonder that the fastest growing category amongst the espresso coffee maker offerings is the fully automatic machine.

Can you just imagine…..at the touch of a button this machine grinds the beans, tamps them, brews the coffee, dumps the leftover grinds and even froths the milk. All that's left for you to do is drink it – and enjoy that full fresh flavor!

As far as the espresso coffee maker goes, the super-automatic model is the pinnacle of innovation and is gaining wide acceptance all over the world for its ease of use and product quality. However, this amount of innovation does not come cheaply. To own one of these 'super' machines you could have to shell out a few thousand dollars.

But when you think about it, why worry about price when your espresso machine can make so many variations of top quality brew based on espresso - all at the mere touch of a little black button?

Are you convinced yet? In the end I suppose it really depends on how much you love your coffee.

Fortunately you don't need to go out and mortgage the family home just to own a good quality espresso maker. There's a good selection of models across the whole spectrum of prices that are more than capable of making a good quality espresso, cappuccino, latte or flat white in the comfort of your own home.

But for the really serious coffee connoisseurs – a good quality espresso maker is the perfect appliance to provide you with many years of coffee brewing pleasure.

Enjoy!

Cheese - Wonderful Cheese

One of the most used ingredients in today's cuisine is cheese. It comes in many different varieties, and can enhance a meal greatly. However, when food is prepared in a restaurant, it needs to be prepared quickly; yet, different type of cheese melts at different temperatures. Chefs found that by grating the cheese, it melts quickly and more evenly.

The Right Tool For The Job

A hand grater is excellent for small household kitchens, however, in a busy fast paced restaurant, an electric cheese grater can grate cheese more consistently and more quickly then an ordinary hand grater making it the most efficient way to grate cheese.

For those who suffer from illnesses and disorders such as arthritis, having an electric cheese grater is a godsend. Many have given up using cheese because of the pain a manual cheese grater can cause.

Another benefit to using an electric cheese grater is that it saves a lot of time in the kitchen. If you are preparing a meal that has many different ingredients, it is time consuming to stand there using a manual grater. An electric grater can get the job done quickly. It is possible to use pre packaged shredded cheese, however it will not have the same flavor. Fresh grated cheese has an incredible taste that enhances every dish. All chefs take pride in the dishes that they create and will go to great lengths to ensure that all ingredients are the best.

When you are shopping for an electric cheese grater, it is wise to keep in mind that there are several different models that are available on the market today. It is important that you comparison shop, as the price will vary.

It is equally important that you read the customer comments and reviews on each of the electric cheese graters that you are considering.

Corded, Cordless or Battery?

Another feature that should be considered is whether or not you should purchase a cordless electric cheese grater or one that has a cord; each one has its own characteristics. Electric cheese graters come in a variety of sizes, it is important that you choose the right one for you.

A cordless electric cheese grater is chosen more often because it offers a consistent power level, where a battery operated cheese grater is only as strong as the battery.

If you enjoy eating a fresh slice of cheese that is cut right from the block, you probably have some sort of cheese slicer in your kitchen cupboard. While knives can cut some of the harder variety of cheeses sufficiently, it is better by far to use a cheese slicer to get perfect portions of cheese every time. There are a variety of slicers on the market today, and some will work best for individual use and cooking, while others are pretty and functional enough for your entertaining needs. No cocktail party is complete without a cheese platter, and no cheese platter is complete without a cheese slicer.

The History of the Cheese Slicer

The cheese slicer was invented by a Norwegian carpenter named Thor Bjorklund in 1925. His wife had sent a chunk of cheese to his workshop for lunch one day, and the innovative carpenter needed a way to cut off smaller slices. Through that experience, he created the first cheese slicer, which he also patented that same year. The slicer began to be mass produced in Norway in 1927. Since that time, many variations have been created on Bjorklund's design, allowing every cook to find the perfect slicer to meet his needs. Although they are most popular in some European countries where sliced cheese on bread is a common fare, many styles have gained momentum in the United States as well.

Different Designs of Slicers

There are a variety of designs of cheese slicers, including those that are primarily for functional purposes. These can include many hand-held designs, and can run the gamut in quality and price. If you slice a lot of cheese to use in your recipes and cooking, it is best to find a high-quality and functional design that will last through time and plenty of use.

On the other hand, if your main purpose in a cheese slicer will be for entertaining, there are many styles on the market that are beautiful as well as functional. Some of these designs are crafted out of high-quality wood or even marble, and some come with a built in tray to hold crackers or slices of bread.

These attractive cheese slicers can also make a wonderful gift for the person on your list that seems to have everything. You can throw in a package of delicious French cheese and a bottle of wine to complement, and your recipient has the beginning supplies for a lovely cocktail gathering.

Many people say there's nothing more American than apple pie. However there is another sweet treat that's one hundred percent red, white, and blue.

From coast to coast, Americans are wild about iced tea. What many don't realize is that although it's based on an Asian brew, iced tea is an American innovation.

Iced tea's popularity can be traced to the heat wave of 1904 when tea merchant Richard Blechynden decided to serve tea over ice at an exposition in St. Louis. Americans have since perfected different methods of making iced tea, along with several innovate recipes.

Black teas from Ceylon, China and Java are most commonly used to make iced tea. Flavored teas such as lemon green tea, peach black tea, Formosa oolong, or Japanese sencha may also be used.

While some prefer their chilly brew without sugar, iced tea can also be taken sweet. Superfine baking sugar or bartender's sugar should be used to sweeten the flavour. Other options including preparing sugar syrup on the stove using a 1:1 water and sugar and simmering the mixture for a few minutes. The sugar syrup will keep in the refrigerator for up to two weeks.

Iced tea may be made by cold or hot steeping. In cold steeping, dry tea leaves are placed in a clean jug filled with an appropriate amount of cold water. The infusion is refrigerated for at least six hours or overnight, and then strained into a second jug or container. Sugar or lemon may be added prior to serving.

To brew iced tea using the hot steeping method, three options are available:

Method 1
Use twice the quantity of dry tealeaves that you would ordinarily use for hot tea. Infuse in hot water for five minutes, and then pour over a full glass of ice. For best results, let the tea cool before pouring it over ice to prevent clouding or creaming down.

Method 2
Double the tealeaf amount, steep for 5 minutes in hot water, and then pour the infusion into a container with the same amount of cold water. This method dilutes the strong tea and prevents clouding.

Method 3
Steep black tea in boiling water for 5-8 minutes. Strain the brewed tea into a container containing cold water, and then add sugar or lemon to taste. If you brewed too strong a concentrate, it will be diluted when poured over ice. If you still find the tea too strong, you may add a little water until you have the perfect iced brew.

Many people enjoy mixing their iced tea with an equal amount of lemonade or other fruit juices. Take care that the juice does not overpower the flavour of the tea. Sweetened, flavoured, hot or cold brewed, iced tea is an age-old American tradition. Brew up a pot today and for a real taste of America, serve it with a big slice of apple pie.

So you are a coffee lover, and you have all the gadgets and gismos to make that perfect cup. You know all the different coffee types available and your idea of a perfect Sunday morning is to relax with your favorite newspaper and a giant mug of a classic Columbian brew.

So what happens when for health reasons you are told to cut down on the coffee? There are so many reasons these days why you might need to cut down on your caffeine intake, perhaps you are pregnant, or suffering from a heart condition that makes excessive caffeine consumption unwise. As a coffee connoisseur the idea of drinking decaf leaves you cold, but when it is a choice between your health and your coffee you probably don't have much choice. To make your transition easier, there are few things to consider before you stock up on decaf beans.

Be prepared to spend a little extra on high quality decaf to get a decent taste. There are various processes used to remove caffeine from coffee beans and the most economical uses chemicals to accomplish this. Although the chemicals are washed away, small traces can remain that impact the taste of the resulting brew. Some of the good coffee flavor can also be washed away with the caffeine.

Some more expensive decaf beans go through the Swiss method, where the beans are heated with water and then passed through activated charcoal, which bonds with the caffeiene, leaving the beans with reduced caffeiene but the majority of their original taste.

Another, more recent addition to these processes is known as Hevla. Coffee beans are steamed at high pressure and the caffeiene removed, without any real impact on the flavor. The use of this process is becoming more widespread, but is unlikely to be used on the standard decaf for sale in your local supermarket.

As well as checking the manufacturing process when buying decaf coffee, you should also have a careful look at the caffeine content. You may think you have been clever enough to find a great decaf that tastes just like regular coffee, for a reasonable price. You may in fact find that the caffeine content is only slightly reduced, hence the taste, and you can probably do yourself almost as much damage with this as with a regular brew. Also beware of drinking decaf coffee when you are out and about. Because the same machines are used to make decaf as regular coffee, you might unintentionally be getting a large dose of caffeine anyway.

If you really can't stomach changing to decaf, you could just reduce the amount of coffee that you drink and really savor those occasional cups. You could also switch to a darker roast such as an Italian roast, popular for espresso making, which is naturally low in caffeine because most of it has burnt off during the roasting process.

So don't despair when your doctor gives you the bad news. Just because you have to cut down on caffeine, this does not mean that you have to give up your coffee altogether.

A number of coffee loving nationalities, along with coffee snobs worldwide will let you believe that straight and black is the only way to consume this fashionable drink.  All I can say is that they don't know what they are missing out on.  The vast possibilities for coffee drinkers today means there is a different taste and combination for every possible mood and occasion.

We should start with coffee blends. Far from sticking to one bean to produce a single flavor, blenders invent fantastic combinations that can be a real treat to the palate. In Indonesia, Sumatran and Papua New Guinean beans are combined to produce a distinctive, rich brew. Sumatran beans are also combined with Columbian to create a dark roast with a slightly smoky taste.

Introducing flavoring to your coffee can improve even the blandest of roasts.  To sweeten a bitter or acidic brew try almond, vanilla or cherry flavoring.  Certain syrups produce seasonal style coffees, such as gingerbread, ideal around thanksgiving and Christmas. Melting chocolate into your coffee to create mocha has become very popular and the type of chocolate and coffee chosen can make a huge difference to the overall effect.  The Yemeni roast, combined with dark chocolate, makes a really exotic blend, while a lighter effect can be achieved with an American roast and a little milk chocolate. Combining coffee with cocoa beans before you make the drink is another popular method for those coffee lovers with a sweet tooth.

If an alcoholic addition to your coffee is your preference, there are a wide variety of spirits and liqueurs to be used either as an addition or an accompaniment to your drink.  A good whiskey can be combined with black coffee and brown sugar, and topped with cream to produce the perfect Irish coffee. Creamy liqueurs such as Baileys and Amarillo can be added to sweeten your drink.  The Italian grappa is a popular accompaniment to an espresso, and can be drunk separately or added to the brew itself. Rum, brandy and amaretto can each be added to various coffee blends to give a heady effect.

Some of the more adventurous types of coffees available include frozen cappuccinos, perfect to give you that caffeine lift on a hot day, Macadamia and chocolate flavoring that upsets the assumption that a nutty taste is coffee shows poor quality, and mint, raspberry or coconut coffees, that don't taste much like coffee at all!

So with all the options to choose from, it is hard to see how the coffee snobs maintain their mantra that straight and black is the only way to go.  Admittedly you will not be able to make many of these varieties with your one cup coffee makers, and they may not be available from the coffee machines in the office, but a little experimentation at home or in your local café can make coffee drinking a really pleasurable experience.

Chocolate contains many different stimulates that can help give some one a "pick me up".  Chocolate also contains a small amount of caffeine that can get you going when you are feeling sluggish.  However do not worry about getting too much caffeine from chocolate, because it contains the same amount of caffeine that you would get from drinking one ounce of coffee.  Chocolate also causes the body to release serotonin, which is a chemical that has been associated with decreased levels of depression, tension, and fatigue.  Probably the reason chocolate is given on Valentine's Day is that it also contains phenylethylamine which is usually released by the body when you are spending quality time with a loved one.  Chocolate will not make someone fall in love with you or be more attracted to you, but it can help set the mood between two people that love each other.  All in all chocolate is one of the best things on earth.  If you are feeling down, need a boost of energy, or need help setting the mood, then get some chocolate and all of your troubles will just melt away.

You might find this sauce a little spicier than other red tomato sauces. This is because it has large amounts of garlic, oregano, basil, and even chili pepper. Its simplicity and easy-to-make feature allows it to be used in many great Italian dishes.

Besides its traditional use of highlighting the mild taste of pasta such as linguini or ziti, marinara is also a popular dipping sauce for finger foods like fried mozzarella cheese sticks and calzones. This sauce can be used by you to add a little zest to meat dishes such as chicken, veal parmigiano, pork steaks, and grilled seafood. You can also use it to replace mustard or mayonnaise in a burger or a chicken filet sandwich and perhaps relish the food more.

Despite being easy to make, there are currently hundreds of types of marinara in the market. The popularity of the sauce may be due to recent research, which revealed that cooked tomatoes are rich in lycopene, an antioxidant that may help reduce the risk of certain types of cancer.

Origins of Marinara Sauce

Marinara is derived from the Italian word marinaro meaning "of the sea" and marinara sauce loosely translates into "the sauce of the sailors". It originated with sailors in Naples in the 16th century, after the introduction of tomato by the Spaniards. In those days of no refrigeration it was in great demand among the cooks on the ships for two reasons. Firstly, because the absence of meat and high acid content of the tomatoes would not spoil the sauce, and secondly, because it was easy to prepare.

Preparation of marinara sauce

Ingredients

6 pounds ripe Italian-type tomatoes
1 cup very finely minced onion
1/2 cup very finely minced celery
1 cup very finely minced carrots
1/2 cup olive oil
1 teaspoon sugar

Seasonings - Added according to taste

Ground white pepper
Ground coriander
Dried marjoram
Dried basil
Dried oregano
Salt

Drop tomatoes into boiling water, a few at a time. Let the water return to a boil, then remove the tomatoes and drain. Peel and chop.

Cook the onion, celery, and carrots in the olive oil, in a large covered saucepan, over medium-low heat for about 15 minutes, stirring a few times. Uncover and stir, over the heat, for 5 to 10 minutes more, or until the vegetables are very soft and lightly gold.

Add the tomatoes, sugar and pepper and simmer gently, covered, for 15 minutes.

Puree the sauce through the medium disc of food mill. Add the optional seasoning and cook at a bare simmer until a desirable consistency is reached, about 20 minutes, stirring often. Add salt to taste. You can add a little hot sauce to give it a kick as well.

If you prefer a smooth sauce, work the sauce through the fine disc of a food mill.

Cool the marinara and refrigerate it. It will keep, refrigerated, for about a week, or for several months if frozen.

Cream is an essential ingredient in the kitchen - rich in flavor with a smooth and velvety texture.

Scones wouldn't taste quite right without a big spoonful of cream. Where would strawberries n cream be without the cream? And a dollop of thick cream on the side always completes a homemade cake.

Cream is the fat component of fresh milk.

Commercially, the cream is separated from the milk by centrifugal force. Often cream sold commercial has been pasteurised.

Pasteurization is the process of heating the cream to kill harmful organisms like viruses, molds, yeasts, protozoa and or course bacteria. Invented by the French scientist Louis Pasteur in 1862, pasteurization does on kill all micro-organisms but reduces their number to a level unlikely to cause disease.

The many varieties of cream available on the market today can leave one feeling bewildered and lost. But with a little understanding you won't be left in the cold isle feeling glazed-eyed any longer.

Cream is categorized by the amount of milk fat it contains. This percentage should be clearly stated on the label.

Depending on what country you live in the cream will be call different things, but it is the fat content that is important.

Half and half cream is a mixture of half cream and half milk with a fat content of between 10.5 and 18%. It is great as a lighter alternative in coffee.

Light cream has a fat content of between 18 and 30%. This can be used in cooking and is fantastic in soups and curries. However please be aware that it will not whip.

Whipping or pouring  cream has a fat content of  between 30 and 36% fat. In order for the cream to whip well it needs to contain 30 to 36% fat. So this type of cream is ideal for whipping. It has many cooking uses and is great used in gratins, quiches, pasta sauces or cocktails.

Double Cream has 48% plus fat. This cream holds its shape when spooned out of the container. It best not whipped as it tends to separates easily.

Thickened cream contains 35% milk fat and also contains thickening agents, such as gelatine or vegetable gum. These are added to stabilise the cream, making it easier to whip and less likely to curdle or separate. Use it whipped in ice-creams, mousses and cheesecakes or as a filling for sponges.

Sour cream contains 35% to 38% milk fat. It is cream that has been subjected to a bacterial culture that produces lactic acid. This produces thicker cream with a slightly sour-tasting product.

Light sour cream is produced the same way, but it contains only 10% to 18% milk fat and has a thinner consistency. It is more likely to curdle when heated. Use in dressings, casseroles, soups and sauces or on potatoes. Dips are best made with the full-fat variety.

Creme fraiche contains 35% to 48% milk fat. It's thicker and less tart than sour cream, with a slightly nutty flavour. Lactic acid has been added to fresh cream and allowed to mature under controlled conditions, making it more stable (it won't curdle) than sour cream when heated.

Happy Cooking

Searching for a certified or accredited college or university for most disciplines is largely a matter of finding a school accredited by a recognized agency.  Culinary institutes are a bit different.  Because many culinary schools today are associated with or a part of a larger university system, they may be accredited by the licensing agency that approves the school as a whole as an institution issuing bachelor or associate degrees.

However, this type of general accreditation doesn't necessarily guarantee that the particular division of the culinary institute within that university meets the highest standards for fine chefs and restaurant managers in the United States and around the world.  The reason is obvious:  no agency focusing on standard educational disciplines fully understands what is essential to a fine culinary learning experience.  For that very reason, the American Culinary Federation developed its own accrediting system years ago.  This accreditation is given specifically to culinary institutes to designate that they have met or exceeded the additional standards of the ACF for providing a high quality learning experience.

How Accreditation Works for Culinary Institutes

The American Culinary Institute Federation Foundation Accrediting Commission (ACFFAC) judges each culinary institute on several criteria, including:

Curriculum
Faculty and staff
Resources
Organizational structure

Every culinary school wishing to be accredited must go through a process that evaluates all of these things before being approved to carry the ACFFAC seal.

To begin the process, a culinary institute must be recognized by the U.S. Department of Education as an institute of higher education.  When this has been achieved, the next step is a self-evaluation following the guidelines provided by the ACF.  When this is submitted to the American Culinary Institute's commission for accreditation, they will send a fact-finding team to carefully evaluate the institute to verify compliance to all of the requirements put forth.  Any input from the public and graduates is also welcome.  The school receives the ACFFAC seal of accreditation only when it has passed successfully through all of these phases.

It is important for culinary institutes to receive accreditation from the ACF.  The ACF is the largest not-for-profit organization for chefs and restaurateurs in the United States.  It was established as a way to set and maintain professional standards in the food preparation industry over seventy-five years ago.  Only an organization of this type can accurately evaluate the quality and value of a culinary institute.  Judging and evaluation by a group of peers is simply the only way to truly know that a culinary school is giving each student the best possible training, from pastries and desserts to kitchen management.

If you decide that a culinary institute is how you want to prepare for your future, be sure that you apply to ACFFAC accredited schools.  Whether the school is a stand-alone culinary institution or is part of a larger college or university is not as important as knowing that it is approved not only by the U.S. Department of Education as a post-secondary school, but by the American Culinary Federation Foundation Accrediting Commission as well.  If the school holds both of these certifications, you can be sure that you will be receiving an outstanding education at one of the best culinary institutes in the country.

Berries and chocolate. Generally a great combination, right? What if there was a berry that had a cocoa flavor in it? Well as nature would have it, there is. This extraordinarily nutritious berry is called the acai berry (pronounced a-sigh-ee). While it doesn't exactly taste like pure chocolate, the bitterness of cacao is incorporated into acai's intense flavor. The flavor is actually hard to pinpoint as some of its juices have been compared to bitter raspberries while others claim acai produces a salty aftertaste (like say, olives.) Ok, I'm the one that said that. But the flavor is not the only thing that makes acai so unique.

From the rainforests of the Amazons, acai berries have been consumed by Brazilians for centuries. But recently, more and more of these grape-sized berries are falling from the South American palm trees into juice bottles around the world.

Labeled the antioxidant superfood, it's known for its substantially large amounts of antioxidants and nutritional value. Acai has double the cancer-fighting power of blueberries, the formerly known antioxidant contest frontrunner. Consumption of the berry not only helps prevent and attack cancerous cells, but it is said to boost energy and overall immunity as well. Actually, the list of supposed and even validated benefits is virtually endless from improved digestion to better circulation, and even better sleep. It is based on these extraordinary characteristics that acai has been referred to as the most healthful fruit in the world.

But, if you're a juice producer looking for a new venture, many juice and smoothie producers have already jumped the gun on capitalizing on the healthful fruit. While the trend is still fairly recent, grocery store shelves are already well stocked with the likes of organic acai juices, yogurt drinks, smoothies, and even teas.

And the bottles of these products make many a pretty promise. I'm actually drinking an "Organic Acai Antioxidant Superfood Smoothie" right now that claims it's sufficient for a meal replacement. Is that true? Well, it sure seems to satisfy my nutritional needs as the Nutrition Facts label shows sufficient amounts of protein, carbohydrates, fat, potassium and even omega-3 fatty acids! And…actually it's the only thing I've eaten today so far and I don't think I'm hungry! Maybe this stuff really does work (Don't try this at home though folks, acai shouldn't be the only thing you eat all day.)

Acai has also shown promises of preventing heart disease, as it has 10-30 times the amount of cardiovascular-fighting phytochemical called anthocyanin found in red wine. You may have heard of these phytochemicals from the French Paradox that enumerates the oddity of heart disease's rare occurrence in France despite their high fat intake. The concept bears the phytochemicals in the red wine responsible for their continued health.

With all these benefits filling the air, the fruit sounds perfect right? Well I'm not here to tell you that it isn't, but I am here to tell you to be cautious about how much acai you consume. There is such a thing as an antioxidant overdose that has adverse effects such as weakness, fever and toxicity. So, with a fruit so jam-packed with antioxidants, one must be careful. Experts suggest discussing with your doctor what your optimal dosage of antioxidants is.

Today, almost every home has a coffee maker in the kitchen. The fact is, the coffee maker has become a must-have for the kitchen. There are many variations on the coffee maker. The basic model is nothing special ? it brews you a a cup of coffee and that's it.

However, some advanced models offer much more. Many brands of coffee makers offer automatic shutoff mechanisms. That means that if you leave your coffee maker on for an extended period of time, or forget to turn it off before you leave the house, the machine will shut off automatically after a while. This automatic shutoff mechanism is designed to prevent the coffee maker from starting a fire if left for too long.

Then, there are the more advanced versions of the coffee maker that offer more features. Some advanced models sport timers, which are great for ensuring that you have a pot of steaming coffee before you even wake up in the morning. Set the timer the night before, prepare all of the ingredients, and when you wake up your coffee will already be made. You can save ten to fifteen minutes off your morning just by having a timer on your coffee maker. People can now enjoy all the coffee they want in the comfort of their own homes. Most people probably thought that with more and more coffee shops opening up, coffee makers at home would probably disappear. However, even though coffee shops are springing up everywhere and are more popular than ever, it will probably be a long time before people throw out their coffee makers.

Ampalaya is the indigenous name of Bitter Melon or Momordica charantia Linn., a vegetable native to the Philippines and Southeast Asia, known for its bitter taste.

A popular vegetable often grown by many households around the world, the Ampalaya vine can grow up to 5 meters and its leaves can reach to about 4 to 10 cm. Its yellow flowers are both "male" and "female" and are responsible for what makes the Ampalaya vine famous - the melons.

The Ampalaya fruit is usually eaten while still green, because as the fruit ripens its taste grows more bitter and much less tasty. During preparation, the seeds, which turn from white to red over time, are removed. Removing the seeds helps to lessen the bitterness. The skin is retained and proves to be soft and tender once cooked.

Used as a regular vegetable ingredient for many Asian dishes, the Ampalaya is also significant for its well-documented blood sugar-lowering effect. Aside from being rich in fiber and nutrients such as iron and potassium, several key compounds have been identified in the fruit, notably charantin, vicine and polypeptide-p, a known plant insulin that numerous pre-clinical studies and limited clinical trials have attributed to the plant's beneficial effects to blood sugar. Several supplements for diabetics have been developed using the Ampalaya, most notably an Ampalaya tea and capsules using the dried Ampalaya fruit.

As diabetes continues to rapidly spread across countries and social strata, the Ampalaya is expected to provide diabetics with a safe and natural alternative to help control their elevated sugar levels. While the herb is still rare in countries where it is not indigenous, expect the Ampalaya and Ampalaya-based products to start gracing local grocery shelves as more and more people realize its potential anti-diabetes use.

Bitter melon has many documented health benefits - get some today and try it for yourself!

Chocolate coins are the new way to advertise and market products and services. The corporate world is always coming up with new and catchy ways to advertise their products and chocolate coins can advertise company logos or be used as an incentive program for personnel. Employees of the month programs are a good place to use these chocolate coins to reward the hard working individuals. Many chocolate companies are using a new technology called chocolography to transfer images and logos on to pieces of chocolate to create individual pieces. The new technology allows an image, picture or message to be transferred on to the surface of the chocolate. Some companies are giving these corporate logo chocolate coins to business people attending business meetings, for trade show promotions and to thank their clients for their business. One chocolate coin company has creatively designed a clamshell case for the coins to rest in, thereby protecting the coin for transportation and for a greater effect in advertising.

This idea is also being introduced for party favors and wedding favors. The names of the wedding couple or their picture can be positioned onto the surface of the chocolate coins. Chocolate coins also make unique gifts for baby showers and bar mitzvahs. Special anniversary dates or birthdays could be added to make a personalized favor. The chocolate used can be colored to suit the theme of the party or occasion.

Chocolate coins are available in different shapes such as circles, hearts, lollipops, boxes, squares and many more imaginable styles. A variety of chocolates are used in making these chocolate coins, including dark, milk and even vanilla. Some chocolate companies use colored foils to wrap the chocolate coins to accentuate the printed areas of the coins. Some companies prefer an imprinted look to the coin, as where the coin takes on a more realistic look resembling actual coins. The companies put their mark on the coin by providing the required emblem to the chocolate printing company. The printing is done by an automated impressing system that stamps the image onto one or both sides of the chocolate coins. Choices of font and images can add flair to the coins. From simplistic to very intricate and complex designs, the impression is sure to please and make of the coin an excellent reminder of the company or event. Photographs can be added to make even more of an impression. A picture of a business or an honorary person lends more detail to the chocolate piece and furthers the impact and personalization of the product.

The Orange Family

The familiar oranges are the most popular of our citrus fruits. They are nutritional, versatile, and keep well. Popular varieties include Valencia, navel, temple, and blood oranges.

The navel orange is best as an eating orange since its sweet pulp tends to turn a little bitter when the juice is exposed to air. Valencia oranges are enjoyed for both eating and juicing. The blood orange is a hybrid with an orange and red rind and reddish flesh and some people think, a touch of raspberry-like flavor. The temple orange is a flavorful orange-tangerine hybrid.

As with most citrus fruits, choose oranges that are heavy for their size indicating juiciness and those without soft spots or defects in the skin.

    • Orange tip: If you are squeezing oranges for morning juice, stop and grate the zest from several first. The zest can be frozen for months to be used in a variety of recipes from cookies to casseroles.

    • Orange tip: When grating the zest from oranges or lemons, remove only the outer, colored portion of the rind. The white pithy layer is bitter.

Oranges have been crossed with other citrus fruits to create a wonderful array of related fruits. Citrus fruits related to or crossed with oranges include:

Mandarin oranges are small sweet oranges with a loose skin. They have a light orange color and a complex, sweet flavor. The Satsuma, Honey and Royal are the three major mandarin varieties.

Mandarins are often imported. In the United States, mandarins are grown in Florida and California but are sold mostly to canneries and unavailable to consumers. If you can find fresh U.S. fruit, buy it.

Tangerines are a type of mandarin orange. They are red-orange and have a distinctive flavor. They are usually available as early as Thanksgiving and include Fairchild and Dancy varieties.

    • Tangerine tip: Add tangerine segments to coleslaw or tuna salad for a bright, unexpected treat!

Tangelos are a cross between a tangerine, a grapefruit and an orange. They are noted for their juiciness and mild, sweet flavor. Orlandos are a popular variety of tangelos.

    • Tangelo tip: Freshly grated tangelo peel lends an exotic flavor to other foods.

Ugli fruits are a specific type of tangelo. They have a loose skin which is often discolored and pock-marked and is often odd-shaped. Don't let that fool you; it has a very sweet, citrus taste. It is seedless and is great for snacks or salads. They peel easily or can be cut in half and eaten like a grapefruit.

    • Ugli tip: Children are fascinated with ugli fruits. Children find both the name and odd appearance intriguing and the flavor and texture of the fruit, appealing.

Clementines are a type of small, seedless mandarins with very sweet flesh. They are a cross between an orange and a Chinese mandarin. The taste is distinctive from both a mandarin and a tangerine. They are usually imported from Spain, Morocco, and other parts of North Africa.

Minneolas are a cross between a tangerine and a grapefruit. They can be recognized by their pear or bell shape. They are about three inches in diameter and a bright reddish-orange. They are closely related to tangelos.

The Lemon and Lime Family

Lemons with their bright yellow fruit are our second most popular citrus. There are two major varieties sold in the United States, the Lisbon and Eureka, which are so similar that they are difficult to tell apart. You may find a Meyer lemon which a cross between a lemon and an orange or mandarin. They are less acidic and will taste sweeter.

    • Lemon tip: Try squeezing fresh lemon on salads and steamed vegetables in place of part or all of the salt or butter. In doing so, you will reduce your salt and fat intake.

Rough lemons are, as the name suggests, lemons with a rough skin. Cultivated in the tropics, they are round and larger than domestic lemons but used the same way.

Limes are shaped like lemons but are green, smaller, and have both more sugar and more acid. There are two main varieties of limes: Mexican or Key limes and Persian limes. Key limes are famous for Key lime pie. Most limes in the grocery store are Persians.

    • Lime tip: Use the rind of juiced limes to clean your copper-bottomed pans.
Leech Limes are larger than limes with a wart-like skin.

The Grapefruit Family

Good quality grapefruit have a smooth, firm, and shiny skin. Pick grapefruit that are medium to large and that feel heavy for their size.

    • Grapefruit tip: When shopping, avoid fruit with a dull or wrinkled skin. Pick fruits that are heavy for their size. It's not necessary to avoid fruits with green on the skin as the color does not indicate ripeness.

White grapefruit have a smooth yellow skin and a flesh that is pale yellow and tart.
Red grapefruit are sweet, tart, and juicy with a pink to red flesh. Ruby, Star Ruby, and Rio Red are popular varieties.

    • Grapefruit tip: Researchers have found that red grapefruits have more antioxidants than white grapefruits. These antioxidants are thought to lower cholesterol and reduce heart disease.

Pummelos, also called Chinese grapefruit, are the largest citrus fruit! The peel is thick and green on the outside, while the interior is either white or pink. Pummelos are slightly milder tasting than regular grapefruit and are very aromatic.

Sweeties are a cross between a pummelo and a white grapefruit. It is shaped like a grapefruit and juicy. Because it has less acid than a grapefruit, the sugar is more dominant and the taste is sweeter.
